Dairy free recipes

Yorkshire puddings:

Mine came out flat but was actually quite yummy. I made a giant one but the mixture would probably make about 4-5 small ones. I mixed all the ingredients and gave them a good whisk, left for about an hour to get to room temperature. Heat oven to 200°c /gas mark 6. I placed a small blob of olive oil in the cake tin to get hot after about 10 mins add the mixture and cook for 20mins approx. Do not open oven door as this makes them sink. (hence my flat pud but I had to use the oven). Ollie loved them!
  • Soya milk 140ml
  • Splash water
  • Plain flower 100g
  • 1 egg

Dairy free fairy cakes:

These yummy fluffy fairy cakes came out way better than i expected. Combine sugar and Margarine (dairy free vitalite), once fluffy I mixed in the eggs them folded in the flour. Give it a good beating with a wooden spoon then add approx 1 table spoon of either oat milk or coconut milk. I also added vanilla extract. You could combine all sorts to make these to yours and little ones taste. Pop in the oven for approx 15-20 mins until they look golden.

Ingredients: Below makes approx 12-14 fairy cakes or 1 small cake tin. Double the ingredients and you could easily make a 3 tier sponge cake using 3 cake tins. Or if you are trialing the recipe use half the ingredients to make half a dozen cakes.

  • 4oz margarine (Vitalite)
  • 4oz Self raising flour
  • 4oz Caster sugar
  • 2 eggs
  • either 1 table spoon of oat milk or coconut
  • (optional) vanilla extract or whatever you prefer to make your fairy cakes yummy.
Tuna toastie:

Although I put toastie I did in the oven. Firstly get 2 slices of wholemeal bread, using a brush cover 1 side of each slice with olive oil. Place 1 slice oil side down on the baking tray. Next pop  1/3 of the tuna in a bowl along with a level dessert spoon of soft cheddar style cheese. You could always try hard cheese I'm sure that would also be nice. Also chop up few cherry tomatoes into the bowl and sprinkle of herbs or whichever herbs you prefer for little ones taste. Mix all in the bowl. Layer the mixture onto the slice on the baking tray not too close to the edge. Then place the other slice on top. Using you fingers or blunt edge of knife squish the crusts together to make a parcel. Cook in the oven for approx 10-15 mins flipping half way through. Make sure the oiled sides are outside so the bread is crispy and won't stick to the tray. Slice up and hopefully your little one will enjoy. It won't be to everyone's taste. My son loves anything tomato.

  • 2 rounds wholemeal bread (check label make sure not handled in milk factory)
  • Tinned Tuna
  • Tomatoes (I used cherry)
  • Free from cheese (I used tesco soft cheddar style)
  • Olive oil
  • Mixed herbs

more to follow as I experiment............
